Baozhong

Mr Yu farms tea naturally on his small farm in the Pinglin mountain area not too far from Taipei. He is well-known for his white and baozhong teas which are famous from this area. It is a lightly oxidised tea between green tea and oolong tea with a refreshing light floral notes and a gentle grapefruit tang combined with a long smooth aftertaste. After many years work on improving the soil through natural means, the local ecology is thriving and rare insects, birds, tree frogs and pangolins are regular visitors to the farm. Mr Yu is also trying to reduce the density of the planting of tea so his planting looks more like traditional planting and spacing of dancong tea trees on Wudong mountain in China than other local farms.

Brew with boiled water that has been allowed to cool for several minutes and a teaspoon per cup. It can be brewed for several infusions.
