A unique sencha made by Mr Saito in Honyama, one of the most famous sub-regions for tea in Shizuoka, Japan.
This sencha is made from a cultivar developed in secret by Mr Saito simply called ’25’. Noticing that pests seemed to love the taste of this plant, Saito-san spent 25 years cultivating it until he could grow it successfully without the use of any pesticides, giving the cultivar its name.
This is one of the richest non-shaded Japanese greens we have stocked, an elegant asamushi sencha finely balanced between fruit sweetness, acidity, and saline umami. Best brewed with 4g of tea per 150ml and water cooled to around 70 degrees.
