An exceptionally balanced gyokuro, shaded for 20 days and made by Mr Saito in Honyama, one of the most famous sub-regions for tea in Shizuoka, Japan.
For the last few years we have been searching for outstanding gyokuro teas made without the production methods that have become hallmarks of modern gyokuro. Many of the best gyokuro teas feature use of nitrogen-heavy chemical fertilisers, which produce strong,”umami bomb” teas but often without much subtlety.
This is one of the best non-handrolled gyokuros we have ever stocked: vibrant and aromatic, and finely balanced between lime juice acidity and a gentle kombu-like umami, backed by an intense vegetal flavour. For the best result, brew with around 5g of tea per 100ml and water cooled to around 50 degrees.
