An exceptionally balanced gyokuro, shaded for 20 days, then hand-picked and made by Mr Saito in Honyama, one of the most famous sub-regions for tea in Shizuoka, Japan.

For the last few years we have been searching for outstanding gyokuro teas made without the production methods that have become hallmarks of modern gyokuro. Many of the best gyokuro teas feature use of nitrogen-heavy chemical fertilisers, which produce strong,”umami bomb” teas but often without much subtlety and originality.

This is one of the best gyokuros we have ever stocked: vibrant and aromatic, and finely balanced between acidity and a gentle umami, backed by both vegetal and floral flavours due to his tea’s slow growth at high altitude. For the best result, brew with around 5g of tea per 100ml and water cooled to around 50 degrees.
