Just 4.5kg picked and made during November 2023. This tea is Mr Hsieh’s pride and joy and he follows the most time-consuming but also the most authentic method for making white tea. He spreads freshly picked tea leaves on bamboo trays and places them in well-ventilated indoor spaces for natural withering. This process takes 4-5 working days to achieve the appropriate level of withering. This special method neither destroys the enzymatic activity nor promotes oxidation, preserving the fresh and original tea aroma. The cultivar he uses is Hongyu or Red Jade (TTES No.18) which is a hybrid of a Taiwanese local tea tree and Burmese large leafed tea tree. It has a deep texture as well as cinnamon, lavender and mint notes.

Brew with boiled water that has been allowed to cool for several minutes and 2.5 grams of leaf. It can be brewed for several infusions.

Description

Mr Hsieh is a second generation tea maker whose family have been growing and processing tea for over 50 years. Mr Hsieh and his wife produce their teas naturally without pesticides and are certified by the Japanese environmental body MOA, using traditional methods of aiding tea growth such as growing grass together with the tea plants to keep in heat and moisture and removing insects by hand.

We named the 4 teas they make for us “Yimu” or “One Acre” as their farm is just an acre in size. On this tiny farm, they intercrop their tea field with ginger which they sell at their local organic market.
