Baozhong Green 2013
A very green Baozhong tea from Wenshan in northern Taiwan. This Baozhong is made with leaf supplied by our friend Mr Chen to his local Buddhist co-op group - the Xin Organic Co-op - that has worked tirelessly with farmers to promote ecological farming for the sake of the local environment.
Brew with 85-90 degree water and around 5g of leaf to bring out the umami and sweet vegetal characteristics of this special tea.

More About Baozhong Green 2013
Pictured below are Mr Chen's farm and the mountains surrounding it where the Xin Organic Co-op process his leaf. The farm is 650m high in the mountain and only a few acres in area, with an annual production of around two hundred kilos. Mr Chen uses no pesticides on his farm, allowing the tea to grow organically and also providing a home for the Jade Frogs living beside the field, which breath through their skin and would not be able to live in the presence of pesticides. He has started to grown his tea trees wildly (although there is no production yet) and produces a kilo of tea per year made from his personal 100 year old tea trees.
